Blanc de Blancs

Pale golden in colour, with a soft persistent mousse, this Blanc de Blancs has the fragrant aromas of blossom, violets and lemon zest on the nose, layered with notes of brioche and fresh apple pastries. These aromas continue on the palate adding candied lemon, caramel and honeycomb. Perfectly balanced, this wine has a crisp acidity and wonderfully creamy texture from oak ageing; that gives way to a long and complex finish.

Rosé

A very delicate pale pink colour. Bright red fruit, strawberries and raspberries with a note of pomegranate on the nose. Pink grapefruit on the palate balanced by a touch of sweet marshmallow. Slight earthy texture, sweet, fresh hay with a creaminess from the oak element.

A note about Our Sparkling Wine

People used to laugh at English wine, they don’t seem to be laughing any more... Here at Hattingley Valley, we use the traditional method for producing our sparkling wine, but what sets our wines apart from the rest is the subtle use of oak barrels. The winery, which has a capacity of over 600 tonnes, ferments a small proportion of the wines each year, as well as ageing on lees in stainless steel tanks, helping soften the wines before they go into bottles for the second fermentation.

Following fermentation stages the wines are aged in barrels or tanks for up to eight or nine months, then blended, filtered and bottled before commencing further fermentation and ageing in bottles. This process can take a minimum of 18 months and a maximum of seven years to mature and develop.

STILL Chardonnay

Pale lemon in colour, this Chardonnay is wonderfully vibrant, with aromas of lime, blossom, candied pear and tart nectarine on the nose. Citrus and green apple continue on the palate, along with notes of elderflower, which are complimented by a natural bright acidity. A fine and rich mouthfeel ends in a long and refreshing finish.

STILL Pinot Noir

Bright Ruby in colour, this elegant pinot is bursting with aromas of red fruit, including strawberries
and cherries with hints of tobacco smoke. On the palate, the aromas continue, revealing candied
cherries, cooked fruit and rich dark chocolate. A smooth mouthfeel from oak ageing balances well
with the wine’s acidity, ending in a long and smooth finish.

STILL Rose

A beautiful pale salmon pink colour, with notes of grapefruit, pomegranate, fresh strawberries and blossom on the nose. On the palate, this tastes of fresh cherries and raspberries with floral notes; this is a very easy wine to drink as an aperitif.

A note about STILL By Hattingley

After the launch of our Hattingley Valley STILL Rosé in 2019 and its subsequent success, we decided to try our hand at creating our STILL Pinot Noir and STILL Chardonnay in 2020. We, and of course our customers, were very impressed with the outcome and our STILL Pinot Noir 2020 even won Silver for the Wine GB Awards!
