2016 The Bacchus Blues
Hand crafted boutique wine made from Pinot Gris and Bacchus to create a wonderfully aromatic wine with fresh tropical fruit and elderflower flavours. Only 219 bottles were produced and each bottle is individually hand numbered.

VINTAGE
Dry, settled weather in late September and early October 2016 provided great ripening conditions for the grapes. The fruit was exceptionally clean with excellent natural sugar levels while retaining characteristically crisp English acidity.
PRODUCTION
Harvested and destemmed by hand, the Pinot Gris and Bacchus grapes were crushed together and cold soaked for 48 hours. After pressing, the juice was fermented in a five year old Burgundy oak barrel and left to age for six months on lees. During this time, full malolactic fermentation took place and the wine was gently stirred once a month to enhance its final texture and complexity.
TASTING NOTES
Bold aromas of lime zest, elderflower and spices. The palate is fresh with tropical fruit and apricot notes supported by soft, integrated oak. Balanced, crisp acidity allows for a long, harmonious finish.
